These Keto Protein Powder Cookie Bars are a nostalgic, low-carb take on classic magic cookie bars. Packed with protein, healthy fats, and no flours or condensed milk, they’re ideal for satisfying sweet cravings while staying keto. A blend of protein powder, collagen, cocoa, and sugar substitutes provides the base, while a chocolate chip topping adds richness and crunch.

Quick to prep and easy to customize, these bars are a great option for dessert, meal prep, or even a post-gym snack. Refrigeration helps them firm up for the perfect texture and bite.

Ingredients

• 1 scoop Quest Vanilla Protein Powder

• 1 scoop collagen

• 1 tbsp cocoa powder

• 2 tbsp Brown Sugar (allulose or erythritol)

• 4 tbsp powdered erythritol

• 2 large eggs

• 1 stick butter (1/2 cup) melted

• 2 tbsp chocolate chips and/or other optional toppings

Directions

1. Preheat oven to 350°F.

2. Combine all ingredients in a bowl and beat until combined.

3. Sprinkle with chocolate chips.

4. Bake for 15 to 18 minutes, until the top starts to brown. If using Keto Chow, check at 15 minutes to avoid dryness.

5. Remove from oven and allow to cool.

6. Turn out onto a flat cutting surface and cut into 12 equal pieces.

7. Refrigerate for 2 hours or more before eating to firm up.
