Made without almond flour or egg white powder, this recipe uses unflavored whey protein powder and frozen grated cheese to deliver structure and rich flavor. The stiff-whipped egg whites help keep the buns airy, while the Parmesan and Italian seasoning give them a savory finish.

Ingredients

• 5 eggs, separated

• 3 Tbsp. unflavored whey protein powder

• 2 oz. frozen cheese, grated

• Parmesan cheese, for topping

• Italian seasoning, for topping

• ½ tsp. baking powder

Directions

1. Preheat oven to 350°F.

2. Using a stand mixer, whip the egg whites for about 3 minutes until stiff peaks form.

3. While the whites are mixing, use a hand mixer to beat the yolks in a large glass measuring cup until well mixed, about 1 minute.

4. Add baking powder and whey protein powder to the yolks and mix until well incorporated.

5. Fold about 1 cup of whipped whites into the yolk mixture to combine.

6. With the stand mixer on low, slowly add the yolk mixture to the remaining egg whites, blending gently.

7. Scrape sides and mix a few seconds more.

8. Add grated frozen cheese while mixing on low, blending evenly.

9. Finish mixing gently with a spatula, scraping the sides.

10. Divide the batter into 6 equal portions on a silicone muffin top pan or parchment-lined baking sheet.

11. Smooth tops and sprinkle with Parmesan and Italian seasoning (optional).

12. Bake for 15 minutes.

13. Let cool before gently removing from pan. Enjoy!
