Coconut Chia Seed Pudding

This Coconut Chia Seed Pudding is a rich and creamy treat that's both refreshing and nourishing. It’s made with just a handful of wholesome ingredients like coconut milk, chia seeds, and a touch of natural sweetener. The chia seeds create a thick, pudding-like texture that absorbs all the tropical coconut flavor.

Perfect for a make-ahead breakfast, light dessert, or post-dinner snack, this pudding can be customized with your favorite extracts and toppings like fresh berries, coconut flakes, or nuts. It’s a delightful low-carb option to satisfy your sweet tooth while keeping things clean and keto-friendly.

Ingredients

• 1 (15 oz) can coconut milk (organic if possible, with the least amount of thickeners)

• 1/4 cup chia seeds

• 1–2 tbsp pure maple syrup or honey

• 1/2 tsp almond or vanilla extract

Directions

1. Empty contents of canned coconut milk into a medium bowl or glass liquid measuring cup.

2. Whisk coconut milk together if contents have separated.

3. Stir in chia seeds, maple syrup, and almond extract. Blend well.

4. Refrigerate for at least a couple of hours, or until coconut milk has set and seeds have absorbed moisture.

5. Enjoy as a side dish, or eat by itself!
