• 1 (15 oz) can coconut milk (organic if possible, with the least amount of thickeners)
• 1/4 cup chia seeds
• 1–2 tbsp pure maple syrup or honey
• 1/2 tsp almond or vanilla extract
1. Empty contents of canned coconut milk into a medium bowl or glass liquid measuring cup.
2. Whisk coconut milk together if contents have separated.
3. Stir in chia seeds, maple syrup, and almond extract. Blend well.
4. Refrigerate for at least a couple of hours, or until coconut milk has set and seeds have absorbed moisture.
