This Buttery Bacon Carrot Mash is a simple, hearty side dish that brings together the earthy sweetness of carrots with the rich, salty crunch of bacon. Finished with a touch of lemon juice and fresh cilantro, this mash offers a bright, citrusy twist that cuts through the richness beautifully.
It’s a perfect alternative to traditional mashed potatoes, and ideal for any meal where you want a low-carb, flavorful side. Serve it hot alongside grilled meats or roasted poultry for a deeply satisfying experience. Leftovers are rare, but can be stored in the fridge for up to 3 days.
• 1 lb carrots
• 7 pieces bacon
• 3 tbsp cilantro
• 2-4 tbsp grass-fed ghee or butter (to taste)
• 1-3 tbsp lemon juice (to taste)
• sea salt, to taste
1. Skin the carrots and cut them into chunks.
2. Fill a pot with water, bring to a boil, and place the carrot chunks into the boiling water.
3. Boil the carrot chunks until soft.
4. While the carrots are boiling, chop the bacon into 1/4 inch x 1 inch slivers and cook at medium heat until crisp.
5. Remove cooked bacon and place on a plate to cool.
6. Finely chop fresh cilantro and prepare lemons for juicing.
7. Drain the carrots once soft, then mash to desired consistency.
8. Add bacon pieces and chopped cilantro, then stir in ghee or butter to taste.
9. Add lemon juice to taste and salt as desired.
10. Serve warm and enjoy.
