This homemade carnivore mayonnaise is a rich, creamy condiment made exclusively from animal-based ingredients. It’s ideal for anyone following a strict Carnivore or Zero-Carb diet, and it comes together quickly with a few simple steps.
Use any animal fat like butter, lard, duck fat, or even a mix for a personalized flavor. Mustard and lemon juice (or apple cider vinegar) add extra tang and brightness, but they’re entirely optional for those with strict dietary needs. This mayo is a perfect addition to meat-based dishes, or as a fat booster for those practicing intermittent fasting or OMAD.

• 1 whole egg, separated
• ½ cup of any animal fat such as butter, lard, duck fat, chicken fat, etc.
• 1 tsp mustard (optional)
• 1 tsp lemon juice or apple cider vinegar (optional)
• ¼ tsp sea salt
1. Place your separated egg yolk in a medium-sized bowl or measuring cup, large enough to handle your hand mixer or immersion blender.
2. Place your chosen fat into a microwave-safe container or a pot on the stove and heat it until melted and bubbly.
3. Add the lemon juice, mustard, and salt to your egg yolk mixture (if using).
4. Mix/blend your yolk mixture until it is nice and frothy (approximately 30 seconds).
5. Slowly add your melted fat to the cup while constantly blending to incorporate the fat with the yolks. This should take at least 5–6 minutes until the mixture is creamy.
6. Pour the reserved egg white on top of your blended mixture and incorporate it for about 10 seconds.
7. Place the mixture in the fridge. It will thicken to a mayonnaise-like texture within a couple of hours.
8. Use as needed within 10 days.
Note: For firmer mayo when using tallow, try doubling the egg yolks and whites at the end.
