• 2 sticks of butter (each stick equals ¼ cup, 4 oz, 8 Tbsp, or 24 tsp)
1. Put the butter sticks into a skillet over medium heat.
2. When it’s melted, lower the heat to see the foam at the top. Stir and scrape the sides.
3. Don’t take your eyes off the pan at this stage, as it browns swiftly.
4. Note that the darker the butter gets, the more intense its taste.
5. Remove the pan from the heat when it looks as brown as you like.
6. Let it cool for 5 minutes.
7. Pour the butter into a measuring cup. Make sure you take all the brown bits with you, as it contains all the flavour!
8. Stir to avoid the brown bits settling in the bottom of the cup.
9. Pour the butter into a mould or in a pan covered with parchment paper.
10. Put the moulds or pan in the freezer.
11. Remove them from the mould/ pan when frozen and keep them in a container in the freezer or fridge for future use.
