These All-Purpose Waffles are a carnivore-friendly twist on traditional waffles, using pork panko as the star ingredient.
Originally inspired by a pork rind bread recipe, this version is versatile enough to serve as burger buns, sandwich bread, or a satisfying breakfast base.
Whether you stick with the savory base or add vanilla and cinnamon for a breakfast variation, these waffles are quick, filling, and adaptable to any meal.
• 1 cup (90 grams) pork panko
• 4 large eggs, whisked
• ¼ cup (½ stick) salted butter, melted but not hot
1. Preheat a mini waffle maker according to the manufacturer’s directions.
2. In a medium-size bowl, mix the pork panko, eggs, and melted butter with a fork until a moderately thick batter forms.
3. Drop a small scoop of the batter (about 3 tablespoons) onto the waffle maker and spread to the edges.
4. Cook each waffle for 2 to 3 minutes, until toasty and browned.
5. Repeat with remaining batter to make 6 to 8 waffles total.
Variation: For breakfast waffles, add 1 teaspoon vanilla extract and ½ teaspoon ground cinnamon to the batter. Garnish with whipped cream, if desired.
