Ingredients

• 12 large eggs

• 1½ cups cottage cheese

• 2 cups (180 grams) pork panko

• ½ cup (1 stick) salted butter, melted

Directions

1. Preheat the oven to 375°F.

2. Line a 9 by 5-inch loaf pan with parchment paper, allowing the paper to extend over the edges of the pan for easy removal.


3. Put the eggs, cottage cheese, panko, and butter in a food processor and blend until smooth.


4.Pour the batter into the prepared pan and bake until browned and a toothpick comes out clean when inserted in the middle, about 1 hour.


5. Let cool for a bit before removing from the pan. Allow the bread to cool completely before slicing. For the best texture, toast slices before serving.
