Carnivore Beef Stew (Crockpot Meal)

This carnivore beef stew is the ultimate comfort food for meat lovers, packed with tender chunks of chuck roast, marrow-rich beef shank, and slow-simmered bone broth. It's an incredibly satisfying and nourishing dish, especially suited for those following zero-carb or high-fat diets. With a slow cooker doing most of the work, it's a hands-off meal that delivers deep flavor and melt-in-your-mouth texture.

Whether you’re looking for an easy weeknight dinner or a hearty meal prep option, this recipe fits the bill. Serve it with a pat of butter or beef tallow for an extra fat boost.

Ingredients

• 4 pounds beef shank

• 4 pounds chuck roast

• 2 teaspoons salt, divided

• 2 tablespoons tallow or other cooking fat, divided

• 4 cups Carnivore Bone Broth

Directions

1. Cube the roast by cutting it into 1-inch square chunks. Place all the cubes in a bowl. Season with 1 teaspoon salt.

2. Season both sides of the beef shank with the remaining 1 teaspoon of salt.

3. Heat a heavy bottom skillet or cast iron pan over high heat. Add 1 tablespoon tallow and sear the shanks.

4. Sear all the cubed roast in batches, adding more fat as needed. Flip the meat with tongs.

5. Transfer the seared meat to the slow cooker. Place the beef shanks in first, then layer the cubed meat on top.

6. Pour the broth over the meat.

7. Cover with a lid and cook on LOW for 8–10 hours (up to 12 hours) or HIGH for 4–5 hours (up to 6 hours).
