Blueberry Beef Liver Waffles with Honey Butter

These Blueberry Beef Liver Waffles are the ultimate in nutrient density, combining protein-rich beef liver with antioxidant-packed blueberries for a breakfast or snack that truly fuels your day.

The liver is blended smoothly with eggs and ghee, hiding it within a lightly sweet waffle base. Blueberries add pops of juicy brightness, while a generous dollop of honey butter elevates the dish into indulgent territory.

Perfect for those following an animal-based diet or looking to sneak more organ meats into their routine without compromising on taste or texture.

Ingredients

• 2 oz raw beef liver

• 3 eggs

• 3 tbsp grass-fed ghee (or butter)

• ½–1 cup blueberries

• sea salt, to taste

Directions

1. Turn on your waffle maker so it can heat up while you prepare the batter.

2. Blend the raw liver, eggs, ghee (softened), and a dash of sea salt in a blender until smooth—no liver chunks should remain.

3. Pour an even layer of batter into the preheated waffle maker.

4. Evenly distribute the blueberries over the batter, close the lid, and cook.

5. The waffles will cook very quickly—about 15 to 20 seconds. Once light brown and no longer gooey, they are done. Slight shriveling is normal.

6. Top with 3 or more tablespoons of honey butter and serve warm.
