• ½ tablespoon butter
• 3 whole eggs, whisked
• ⅓ cup cheddar cheese, shredded
• ⅓ cup mozzarella cheese, shredded
• ⅓ cup Parmesan, shredded
• ¼ teaspoon salt
• ¼ teaspoon ground black pepper
1. Warm the butter over medium-high heat in a skillet or frying pan.
2. Crack the eggs in a bowl and whisk until smooth. Mix in half the total amount of shredded cheese, plus salt and pepper to taste.
3. Pour eggs in pan, once warm and let sit for 2 minutes until edges cook and eggs start to set.
4. Lower the heat until egg is almost cooked through. Add the remaining cheese down the center of the omelette.
5. Use a spatula and fold the omelette in thirds by bringing the two sides to the center.
